Greek Chicken and Feta Pizza

It’s no wonder that pizza is one of America’s favorite foods. Despite popular belief, pizza was not invented in Italy, but rather in the United States. During the warmer months, we like to grill our pizza outdoors on our gas grill. This imparts a nice smoky flavor to the crust and gives it plenty of crunch to support a variety of toppings. Greek Chicken Pizza was created for my husband Marco, who loves all Greek foods, especially if feta cheese is involved.

Ingredients

  • Your favorite pizza dough, homemade or store bought
  • 2 cups grilled chicken breast, cubed
  • 1 cup marinara sauce
  • 1/2 cup red onion, thinly sliced
  • 1/2 red bell pepper, thinly sliced
  • 1 cup mozzarella cheese
  • 1/2 cup feta cheese
  • 1/4 cup fresh basil, cut into thin pieces
  • 2 Tbl fresh oregano
  • 1/2 fresh lemon, for drizzling (optional)

Preheat your grill for direct heat and heat until 450 degrees. Roll out your pizza dough and place on a peel gently dusted with cornmeal. Slide the dough onto the hot grill and grill 1-2 minutes. Flip pizza and cook on other side an additional minute.

Spread the sauce on your grilled pizza dough and top with chicken, onion, pepper and cheese, but no herbs.

Place pizza back on grill and cook until cheese is melted, about 5 minutes.

Top with fresh herbs and a sprinkle of lemon juice (if desired).
