Spring is finally here, and as usual, snow is forecast across Nebraska today. Snow aside, the beginning of a new season is a perfect time to reflect, let go of the past and embrace new beginnings. That will be the focus of Lexi Bites over the next few months. Think delicious new recipes with fresh, bold flavors and fun techniques you can try in your own kitchen. I’ll also be refreshing the site with a slight design update. But before we get ahead of ourselves, we have cookies to discuss, specifically: Gluten-Free Chocolate Peanut Butter Chocolate Chip Cookies.
If you’ve been reading between the lines over the last few months, I’ve been going through some major life changes. I recently moved to Omaha, Nebraska. My new apartment is in one of Omaha’s historic districts, the Gold Coast, just on the periphery of the city’s up-and-coming Blackstone District. It’s beautifully renovated, with exquisite wood floors and plenty of bright, natural light. I’m having fun outfitting it with an eclectic mix of bright colors and mid-century modern furniture.
In addition to those major changes, I’m making some minor ones. I’ve been tweaking my eating habits, including revisiting some of my favorite foods and learning to cook for one. I’ve also cut back on the booze, so watch for some fun mocktail recipes in the weeks to come.
Things may be changing, but I’ll never turn my back on cookies. Today’s recipe was inspired by the delicious wholesomeness of Peanut Butter & Co.’s Dark Chocolate Dreams Peanut Butter and a childhood favorite, peanut butter chocolate chip cookies. If you’re gluten intolerant, you probably already have a flourless peanut butter cookie in your arsenal, but I dare you to give this one a try.
Peanut Butter & Co.’s Dark Chocolate Dreams is a blend of all-natural peanut butter, made from American-grown peanuts, and rich dark chocolate. It’s delicious straight from the jar or paired with bananas, pretzels, or whatever your heart desires.
My Chocolate Peanut Butter Chocolate Chip Cookies are naturally gluten-free, with no special flours required. To make them extra special, I’ve topped the cookies with a sprinkling of my favorite Espresso Brava Salt.
Chocolate Peanut Butter Chocolate Chip Cookies are the ultimate comfort food. When I was stressed about my move earlier in the month, I’d often warm up one, two (or sometimes three) cookies and enjoy them with a cup of tea before bed. And with a Spring snow in Nebraska’s forecast, another batch of Chocolate Peanut Butter Chocolate Chip Cookies may be just what’s needed.

- 1 large egg
- ½ cup brown sugar
- ¼ cup granulated sugar
- 1 teaspoon baking soda
- 1 cup Peanut Butter & Co.'s Dark Chocolate Dreams Chocolate Peanut Butter
- 1 teaspoon gluten-free vanilla extract
- ½ cup mini semi-sweet chocolate chips
- Espresso or regular sea salt (optional)
- Heat the oven to 350 degrees.
- In a mixing bowl, mix together egg, sugars, baking soda and peanut butter and vanilla until combined. Fold in chocolate chip cookies.
- On a baking sheet lined with parchment, drop 1-inch spoonfuls of the mixture, about 1-2 inches apart. Flatten the dough slightly with a fork, making a crosshatch pattern. Sprinkle with sea salt (if using).
- Bake 9-10 minutes, or until cookies appear done. Allow to cool about 1 minute and then transfer to a wire rack. Repeat with the remaining dough.
